Hearty Gluten-Free Hamburger Soup
Ingredients
- 1 lb ground beef or turkey
- 1 yellow onion diced
- 2 cloves garlic minced
- 2 carrots sliced
- 2 stalks celery sliced
- 1 can diced tomatoes 14.5 oz
- 4 cups beef broth certified gluten-free
- 1 cup frozen corn
- 1 cup diced potatoes
- 1 tsp Italian seasoning
- salt and black pepper to taste
Instructions
- In a large pot, brown ground beef over medium heat; drain excess fat if needed.
- Add onion, carrots, and celery; cook 5 minutes until softening. Stir in garlic for 30 seconds.
- Add tomatoes, broth, potatoes, corn, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer 25–30 minutes until vegetables are tender.
- Taste and adjust seasoning. Ladle into bowls and serve hot.
