Ingredients

  • 1 lb ground beef or turkey
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth certified gluten-free
  • 1 cup frozen corn
  • 1 cup diced potatoes
  • 1 tsp Italian seasoning
  • salt and black pepper to taste

Instructions

  • In a large pot, brown ground beef over medium heat; drain excess fat if needed.
  • Add onion, carrots, and celery; cook 5 minutes until softening. Stir in garlic for 30 seconds.
  • Add tomatoes, broth, potatoes, corn, Italian seasoning, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer 25–30 minutes until vegetables are tender.
  • Taste and adjust seasoning. Ladle into bowls and serve hot.

Notes

Freeze in portions up to 2 months.
