Mediterranean Chicken Pizza (Gluten-Free Crust)
Pizza night is non-negotiable in our house — gluten-free crust included. This Mediterranean chicken pizza piles on protein and color: chicken, tomatoes, olives, red onion, and a sprinkle of oregano.
Use a store-bought GF crust or flatbread to keep prep under 30 minutes. Pre-bake the crust for extra crunch before loading toppings.
Finish with fresh basil if you have it.

Mediterranean Chicken Pizza (Gluten-Free Crust)
Ingredients
- 1 gluten-free pizza crust 12-inch or 2 flatbreads
- 1/2 cup pizza sauce certified gluten-free
- 1 1/2 cups cooked chicken shredded or diced
- 1 1/2 cups shredded mozzarella
- 1/2 cup cherry tomatoes halved
- 1/4 cup Kalamata olives sliced
- 1/4 red onion thinly sliced
- 1 tsp dried oregano
- 1 tbsp olive oil
Instructions
- Preheat oven per crust package (usually 425°F / 220°C). Pre-bake crust 3–5 minutes if directed.
- Brush crust lightly with olive oil. Spread sauce, then half the cheese.
- Top with chicken, tomatoes, olives, and onion. Sprinkle remaining cheese and oregano.
- Bake 10–14 minutes until cheese is bubbly and crust is golden.
- Rest 2 minutes, slice, and serve.
Notes
Dairy-free cheese works; add a pinch of salt to toppings.
