Gluten-Free Waffle Delight with Fruit Medley
Nothing says slow Saturday morning like waffles. This gluten-free waffle delight uses your favorite certified GF waffle mix (or a homemade 1:1 blend) for a crisp outside and fluffy middle.
The fruit medley is flexible — use whatever is ripe. Kids love building their own toppings bar with berries, banana, peaches, and a drizzle of real maple syrup.
Tip: keep finished waffles warm in a 200°F oven on a rack so they stay crisp while you cook the rest of the batch.

Gluten-Free Waffle Delight with Fruit Medley
Ingredients
Waffle batter
- 2 cups gluten-free waffle mix or 1:1 GF flour blend waffle recipe
- 1 1/2 cups milk dairy or non-dairy
- 2 large eggs
- 1/4 cup melted butter or oil
- 1 tsp vanilla extract
Fruit medley & toppings
- 1/2 cup strawberries sliced
- 1/2 cup blueberries
- 1/2 cup peaches diced
- 1/2 cup bananas sliced
- whipped cream optional
- maple syrup for drizzling
- powdered sugar optional dusting
Instructions
- Preheat the waffle iron according to the manufacturer’s instructions. Lightly grease if needed.
- In a large bowl, whisk waffle mix, milk, eggs, melted butter, and vanilla until smooth. Rest 2 minutes so GF flours hydrate.
- Pour batter into the iron and cook until deep golden and crisp.
- While waffles cook, gently toss strawberries, blueberries, peaches, and bananas.
- Plate waffles, top with fruit medley, whipped cream, maple syrup, and powdered sugar if desired.
- Serve immediately while the waffles are still crispy.
Notes
Freeze leftover waffles; reheat in the toaster.
