Waffle batter

gluten-free waffle mix
or 1:1 GF flour blend waffle recipe

milk
dairy or non-dairy

melted butter
or oil

vanilla extract
Fruit medley & toppings

strawberries
sliced

blueberries

Instructions
Preheat the waffle iron according to the manufacturer’s instructions. Lightly grease if needed.
In a large bowl, whisk waffle mix, milk, eggs, melted butter, and vanilla until smooth. Rest 2 minutes so GF flours hydrate.
Pour batter into the iron and cook until deep golden and crisp.
While waffles cook, gently toss strawberries, blueberries, peaches, and bananas.
Plate waffles, top with fruit medley, whipped cream, maple syrup, and powdered sugar if desired.
Serve immediately while the waffles are still crispy.
Notes
Dairy-free: use plant milk and oil or vegan butter.
Freeze leftover waffles; reheat in the toaster.
