Gluten-Free Gourmet Bruschetta
Ingredients
- 1 gluten-free baguette sliced
- 4 ripe tomatoes diced
- 1/4 cup fresh basil chiffonade
- 2 cloves garlic 1 minced, 1 halved
- 2 tbsp extra-virgin olive oil plus more for brushing
- 1 tsp balsamic vinegar optional
- salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Brush baguette slices with olive oil and toast 6–8 minutes until crisp. Rub with the cut garlic clove while warm.
- Combine tomatoes, minced garlic, basil, olive oil, balsamic, salt, and pepper. Rest 10 minutes.
- Spoon tomato mixture onto toasts just before serving so the bread stays crisp.
- Finish with extra basil and a drizzle of oil.
