Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 cans crushed tomatoes 28 oz each
  • 2 cups vegetable broth certified gluten-free
  • 1 tsp sugar optional
  • 1/2 cup heavy cream or coconut cream
  • 1/2 cup fresh basil chopped
  • salt and pepper to taste

Instructions

  • Sauté onion in olive oil until soft; add garlic for 30 seconds.
  • Add tomatoes, broth, sugar, salt, and pepper. Simmer 20 minutes.
  • Blend until smooth. Stir in cream and basil; simmer 3 minutes more.
  • Taste, adjust seasoning, and serve with fresh basil on top.
