Creamy Gluten-Free Tomato Basil Soup
Ingredients
- 2 tbsp olive oil
- 1 yellow onion diced
- 3 cloves garlic minced
- 2 cans crushed tomatoes 28 oz each
- 2 cups vegetable broth certified gluten-free
- 1 tsp sugar optional
- 1/2 cup heavy cream or coconut cream
- 1/2 cup fresh basil chopped
- salt and pepper to taste
Instructions
- Sauté onion in olive oil until soft; add garlic for 30 seconds.
- Add tomatoes, broth, sugar, salt, and pepper. Simmer 20 minutes.
- Blend until smooth. Stir in cream and basil; simmer 3 minutes more.
- Taste, adjust seasoning, and serve with fresh basil on top.
